 Chopped lemon grass4 Tablespoon, chopped roughly
 Galangal/Ginger1 Tablespoon
 Chopped garlic2 Tablespoon
 Onion1 , chopped
 Whole coriander plants2 , including the roots and stems, chopped
 Grated lemon rind1 Teaspoon
 Green chilies15
 Black peppercorns10 , roughly crushed
 Coriander seeds2 Teaspoon, crushed
 Cumin2 Teaspoon, crushed
 Shrimp paste/Dried shrimp, ground to a paste with a little oil2 Teaspoon
 Salt To Taste
 Cloves3
 Bay leaves3
 Vegetable oil2 Tablespoon

Directions

Blend all the ingredients together to form a smooth paste.
Add a teaspoon or so of extra oil if required.
Store in the fridge in a sealed, airtight container.
