For The Green Curry Paste: Recipe
Ingredients
| Chopped lemon grass | 4 Tablespoon, chopped roughly | |
| Galangal/Ginger | 1 Tablespoon | |
| Chopped garlic | 2 Tablespoon | |
| Onion | 1 , chopped | |
| Whole coriander plants | 2 , including the roots and stems, chopped | |
| Grated lemon rind | 1 Teaspoon | |
| Green chilies | 15 | |
| Black peppercorns | 10 , roughly crushed | |
| Coriander seeds | 2 Teaspoon, crushed | |
| Cumin | 2 Teaspoon, crushed | |
| Shrimp paste/Dried shrimp, ground to a paste with a little oil | 2 Teaspoon | |
| Salt | To Taste | |
| Cloves | 3 | |
| Bay leaves | 3 | |
| Vegetable oil | 2 Tablespoon |
Directions
Blend all the ingredients together to form a smooth paste.
Add a teaspoon or so of extra oil if required.
Store in the fridge in a sealed, airtight container.
