For Eastern Chicken Recipe
Ingredients
1 medium onion
1 tablespoon coarsely chopped fresh coriander
1/4 teaspoon minced fresh hot green chile
1/2 teaspoon ground coriander seed
1 large clove garlic, halved 1/4 teaspoon brown sugar
1 1/2 teaspoons reduced sodium soy sauce
1 1/2 teaspoons lemon juice
2 teaspoons Oriental sesame paste
1/2 pound skinned, boned chicken breasts cut into quarters
Additional fresh coriander for garnish
Directions
Turn oven or toaster oven to broil.
Chop onion in food processor with steel blade.
Chop fresh coriander; mince chile and add with ground coriander, garlic, sugar, soy sauce, lemon juice and sesame paste.
Process to puree.
Arrange chicken breasts on broiler pan (if you have a toaster oven that broils, use it) and spread with puree.
Broil 6 inches from heat 12 to 15 minutes.
Chop additional coriander and sprinkle on top of cooked chicken.
