Foam Biscuits Recipe

These foam biscuits are some great treats with the subtle flavor of lemon juice. Serve it hot with tea or coffee.

Ingredients

 
lb. flour'(4 cups)
 
1/2lb. butter
 
tspns. lemon juice
 
1 tspn. Bi-carb.
 
cup castor sugar
 
1/4-tspn. salt
 
4 tblspns, milk

Directions

Put milk, soda and sugar into a saucepan on low heat and stir until sugar has dissolved and jda foamed.
Remove from stove and cool, ift flour and salt together and rub in the but- ter until the texure of breadcrumbs.
Now stir l the foamed sugar mixture and the lemon jice.
Leave the dough in the 'fridge for few tinutes.
Cut into fancy shapes, or put through cookie maker.
(If a firmer dough is desired, dd a little more flour until desired consis- tency is obtained).
Bake in a hot oven for 10 Tins., or until a pale brown.
Put together when cold with butter icing (optional), his dough can be used for pie crusts, etc., : desired.
