Fluffy Seven Minute Frosting Recipe

Ingredients

 
2 egg whites, unbeaten
 
1 1/2 cups sugar Dash of salt
 
1/2 cup water
 
1 tablespoon light corn syrup
 
11/4 teaspoons vanilla

Directions

Combine egg whites, sugar, salt, water, and corn syrup in top of double boiler. Beat with electric beater about 1 minute to mix thoroughly. Then place over boiling water and beat constantly 7 minutes, or until frosting will stand in stiff peaks. (Stir frosting up from bottom of pan occasionally.) Remove from boiling water. For a very smooth and satiny frosting, pour in large bowl for final beating. Add vanilla and beat 1 minute, or until thick enough to spread. Makes enough for tops and sides of two 8- or 9-inch layers, top and sides of a 13X9X2-inch cake, or 2 dozen cupcakes. Note: Make this frosting only if you have an electric beater!
