2 cups mashed potatoes
 
1/2 cup milk
 
2 tablespoons butter or margarine, softened
 
1 teaspoon salt Dash of pepper
 
2 eggs, separated
 
1/2 cup (2 ounces) shredded sharp Cheddar cheese

Directions

Combine potatoes, milk, butter, salt, and pepper; beat at medium speed of electric mixer until smooth.
Beat egg yolks until thick and lemon colored; stir yolks and cheese into potato mixture.
Beat egg whites (at room temperature) until stiff but not dry; gently fold into potato mixture.
Spoon mixture into a lightly greased 1-quart casserole.
Cover and bake at 350° for 20 to 25 minutes.
