Fluffy Walnut Cake Passover Recipe
Ingredients
| Matzo meal | 3/4 Cup (16 tbs) | |
| Potato starch | 3/4 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Egg yolks | 6 | |
| Sugar | 1 3/4 Cup (16 tbs) | |
| Orange juice | 1 Cup (16 tbs) | |
| Walnuts | 1 1/2 Cup (16 tbs) | |
| Lemon rind - 1 tablespoon, grated | ||
| Egg whites | 6 | |
Directions
GETTING READY
1 Preheat the oven to 325°F.
MAKING
2 In a bowl, combine the matzo meal, potato starch and salt together.
3 In another bowl, beat the egg yolks until thick.
4 Gradually add in the sugar, beating until lemon colored.
5 Add the matzo-meal mixture alternately with the orange juice.
6 Gradually fold in the walnuts and lemon rind.
7 Gently fold in the egg whites.
8 Transfer the mixture into a 9-inch tube pan.
9 Bake for 1 hour or until browned and the cake shrinks away from the sides of the pan.
10 Transfer to a wire rack and let cool.

11 Cut and serve.
