1 cup plus 2 tablespoons easy cook rice
1/2 teaspoon salt
1 tablespoon butter
2 3/4 cups boiling water
Directions
1 Put the rice, salt and butter in a large 1.75 litre/3 pint (7 1/2 cup) mixing bowl. Pour over the boiling water.
2 Cover with plastic wrap, and pierce. Microwave on full power for 13 minutes. Stir after cooking.
3 Stand, covered, for 10 minutes. Fluff up with a fork and serve.
