1. In a bowl, break the eggs and whisk until no white part is visible. Add thyme and sun dried tomato. Season with salt and pepper, whisk again.
2. Heat a skillet, rub butter, pour in the egg, allow to settle for few seconds. Slowly move the spatula from the sides to the center till all the egg is set.
3. Serve warm with bread slices.
