Flsh Fillets With Anchovy Sauce Recipe
Ingredients
1/4 cup olive or salad oil
1 garlic clove, halved
1 2-ounce can anchovy fillets, drained and chopped
2 tablespoons minced parsley
1 teaspoon lemon juice
1 pound fresh or frozen (thawed) flounder or ocean-perch fillets
1/4 teaspoon pepper
Directions
1. Make sauce: In small saucepan over medium-high heat, in hot olive oil, brown garlic. Remove saucepan from heat; discard garlic. Stir in anchovies, parsley, and lemon juice.
2. Meanwhile, preheat broiler if manufacturer directs. Grease broiling-pan rack on rack, arrange fish fillets; sprinkle with pepper; brush well with some anchovy sauce. Broil 5 minutes or until fish flakes easily. Arrange fish on warm platter. Pour remaining sauce over fish.
