1 pound shrimp
2 cups plus
3 tablespoons water
3 tablespoons vegetable oil
2 medium-sized onions, cat in eighths
1/2 medium-sized head cauliflower, broken into flowerets
1 1/2 tablespoons arrowroot
1/4 cup soy sauce
4 cups hot cooked brown rice
Directions
1. Shell and devein the shrimp, reserving the shells. Put the shells and 2 cups of water in a saucepan, bring to a boil, cover, and boil for 15 minutes. Strain the stock and discard shells.
2. Heat the oil in a skillet and saute the onions and cauliflower for 4 minutes. Add the strained shrimp stock, cover, and simmer until the vegetables are crisp-tender, about 2 minutes.
3. Add the shrimp and cook, covered, until the shrimp turn pink, about 5 minutes. Dissolve the arrowroot in the remaining water and add to the skillet with the soy sauce. Stir until the mixture thickens.
