Directions

Cut flounder into 6 thick slices; sprinkle with salt.
Saute onions in butter in saucepan for 5 minutes.
Add flounder slices; brown lightly, turning once.
Sprinkle pepper, ginger and mace over flounder; add 2 cups water.
Simmer, covered, for 30 minutes; stir in lemon juice and rind.
Combine flour, eggs, saffron and parsley; beat well.
Add 112 cup fish stock to egg mixture gradually, beating constantly.
Return to saucepan; simmer, stirring constantly, until mixture is thickened.
Remove flounder to hot platter; pour sauce over flounder.
Serve immediately.
