Flounder In Orange Sauce With Pine Nuts Recipe
Ingredients
| Flounder fillet | 2/3 pound | |
| Lemon juice | 1 Teaspoon | |
| 1 tablespoon olive oil plus a few drops | ||
| Water | 1 Teaspoon | |
| Parsley | 1 Tablespoon, chopped | |
| Raisins | 2 Tablespoon | |
| Pine nuts | 2 Tablespoon | |
| 2 tablespoons orange juice concentrate | ||
Directions
Turn on broiler.
Cut the fillet in half and place on broiler pan (use toaster oven if you have one).
Rub with a few drops oil.
Heat 1 tablespoon oil in small skillet.
Saute raisins and pine nuts over medium heat until pine nuts color, about 2 or 3 minutes.
Stir in orange juice concentrate, lemon juice and water.
Remove from heat.
Broil fish about 2 inches from source of heat about 7 or 8 minutes, just until fish flakes easily with fork.
Don't overcook.
Reheat sauce; chop parsley and add.
Spoon over fillets on individual plates.
