Directions

Thaw fish fillets, if frozen.
Combine spinach, croutons, corn, and cheese.
Combine egg and water.
Add to spinach mixture; mix well.
Spread spinach mixture evenly in a 12x7 1/2x2 inch baking dish, Cover with foil.
Bake in a 375° oven for 10 minutes.
Arrange fish fillets over spinach mixture, overlapping if necessary.
Sprinkle with salt and lemon pepper or pepper.
Cover with foil.
Bake for 15 minutes.
Remove foil.
Arrange tomato wedges on fillets.
Sprinkle with cheese.
Bake about 5 minutes more or till fish flakes easily with a fork.
