Flounder Florentine Recipe

Ingredients
| Preheat oven to 350°F. | ||
| Onion | 1/4 Cup (16 tbs), chopped | |
| Dill | 1/8 Teaspoon | |
| Oil | 2 Tablespoon | |
| Spinach | 1 1/2 Pound, chopped | |
| Cooked brown rice | 1/2 Cup (16 tbs) | |
| Toasted almonds | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| 6 fillets of flounder | ||
Directions
In a saucepan, saute onion and dill in oil until tender.
Add spinach and saute just enough to wilt the spinach (about 3 minutes).
Add rice, almonds and lemon juice.
Heat, stirring occasionally.
Place 1/4 cup of ten mixture on each fish fillet.
Roll and press ends securely.
Arrange in oiled, shallow baking dish (10 x 6 x 2 inches).
Bake in preheated oven for 20 minutes.
