Flounder Divan Recipe

2 tablespoons unsalted butter or margarine
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 cup shredded low-fat Cheddar cheese (4 ounces)
6 dashes hot red pepper sauce
1 tablespoon lemon juice (freshly squeezed preferred)
1 package (10 ounces) frozen chopped broccoli, thawed and drained
1 1/3 cups mashed potatoes
4 flounder fillets (6 ounces each)
Directions
Preheat the oven to 400° F.
Melt the butter in an ovenproof 10-inch skillet over moderate heat.
Blend in the flour and cook, stirring, until golden about 3 minutes.
Gradually whisk in the milk, then cook, whisking constantly, until thickened-about 4 minutes longer.
Stir in 3/4 cup of the cheese, the fat red pepper sauce, and lemon juice, and heat, uncovered, just until the cheese melts about 2 minutes.
Mix in the broccoli.
Spoon 1/3 cup of the mashed potatoes onto each flounder fillet and fold over.
Lay the fillets in the skillet and spoon some of the sauce on top.
Cover and bake for 20 minutes.
Top with the remaining cheese, transfer to the broiler, and broil 4 inches from the heat for 2 minutes or until tipped with brown.
