Flounder Au Gratin Recipe

Ingredients
1 lb. fresh fillet of flounder
5 tablespoons oil
4 tablespoons brown rice flour
2 tablespoons soy flour
4 teaspoons cornstarch
1 cup skim milk powder
4 cups water
Nutmeg, salt, kelp powder, to taste
4 egg yolks
4 egg whites
4 tablespoons wheat germ
Directions
Preheat oven to 300°F.
Brush flounder with 1 tablespoon oil and bake in preheated oven for 15-20 minutes, or until tender.
To make white sauce sift rice and soy flours and cornstarch together.
Put 4 tablespoons oil into saucepan, stir in flours and heat until it bubbles.
Meanwhile, combine skim milk powder and water using a wire whisk and add slowly to oil flour mixture, stirring constantly.
Cook until sauce is thickened and flours have lost their raw taste.
Season with nutmeg, salt, kelp powder to taste.
Beat egg yolks and add a little of the hot sauce to them slowly, stirring, then stir egg yolk mixture into hot sauce, and continue to stir for one minute longer.
Remove from heat.
Meanwhile preheat oven to 350°F.
Break cooked flounder into bite size pieces and add to sauce.
Beat egg whites until stiff, and fold them into fish mixture.
Pour into casserole, top with wheat germ and bake in preheated oven for about 1/2 hour or until the au gratin has set.
