Ingredients
| Flounder | 4 Ounce | |
| 1 pound boned salmon steak, cut in lengthwise pieces, 4 ounces each | ||
| Dash paprika | ||
| Tomato juice | 1 Cup (16 tbs) | |
| 16 ounces fresh, frozen or canned peas and carrots | ||
| Evaporated milk | 1/2 Cup (16 tbs), skimmed | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Season fillets with salt and pepper, and roll each one around a piece of salmon.
Secure with toothpicks.
Sprinkle with paprika.
Bake in shallow pan at 375° F.for 40 minutes.
Heat tomato juice in saucepan, add peas and carrots, and cook until tender (do not overcook).
Stir in milk and heat gently (evaporated milk curdles if boiled).
