Ingredients
| Eggs | 2 , separated | |
| 3/4 cup nonfat ricotta cheese | ||
| Low fat milk | 1/4 Cup (16 tbs) | |
| All purpose flour | 6 Tablespoon | |
| Orange zest | 1 Tablespoon, grated | |
| Sugar | 2 Teaspoon | |
| Baking powder | 1/4 Teaspoon | |
| Salt | 1 Pinch | |
| Vegetable oil | 1 Tablespoon | |

Directions
Add egg yolks and ricotta cheese to food processor or blender; process until smooth.
Add milk, flour, orange zest, sugar, baking powder and salt; process until completely blended.
Beat egg whites in large bowl with electric mixer until stiff peaks form.
Fold in cheese mixture just until combined.
Heat oil in large nonstick skillet over medium heat until hot.
Drop batter by 1/4 cup measure onto skillet.
Cook about 3 minutes or until top is bubbly and looks dry; turn and cook other side 1 to 2 minutes until golden brown.
Repeat with remaining batter.
