Florida Grapefruit Mousse Recipe

Ingredients
5 tablespoons thawed frozen Florida grapefruit juice concentrate, divided
1 teaspoon unflavored gelatin
1 tablespoon granulated sugar
2 Florida grapefruit
3/4 cup evaporated whole or skim milk, chilled
3 tablespoons powdered sugar
Directions
Combine 2 tablespoons juice concentrate and gelatin in small saucepan, stirring until gelatin softens.
Add granulated sugar and 2 tablespoons juice concentrate.
Heat over medium heat 3 to 5 minutes until gelatin dissolves, stirring constantly.
Remove from heat; cool.
Meanwhile, peel grapefruit and remove white pith.
Section grapefruit, removing membrane that separates fruit segments.
Cut fruit segments into bite-sized pieces; set aside.
Beat evaporated milk in medium bowl with electric mixer until frothy.
Add remaining 1 tablespoon juice concentrate; beat until mixture becomes stiff.
Add powdered sugar; beat 10 seconds more until combined.
Fold in cooled gelatin mixture until blended.
Fold in reserved grapefruit; spoon into parfait glasses.
