 Eggs3 Small
 Sugar1 1/4 Cup (16 tbs)
 All-purpose flour - 3 tablespoons, sifted
 Baking powder1/4 Teaspoon
 Semi-sweet chocolate morsels-1 package (1 cup), ground
 Candied orange peel1/3 Cup (16 tbs), chopped
 Shortening1 Cup (16 tbs)
 Blanched almonds1 1/2 Cup (16 tbs), finely chopped
 Vanilla1/4 Teaspoon
 Cinnamon1/4 Teaspoon
 Cloves1/4 Teaspoon
 Nutmeg1/4 Teaspoon
 Lemon rind-1 teaspoon, grated

Directions

MAKING
1)In a bowl, beat eggs until thick.
2)Slowly add sugar and continue beating until very thick.
3)Add flour and baking powder to egg mixture.
4)Add remaining ingredients and blend well.
5)Take a baking sheet lined with browned paper and drop spoonsful, 2 inches apart.
6)Bake at 400 degrees for 10 minutes. Cool on brown paper.
7)To remove cookies, wet paper underneath cookies and peel them off.
SERVING
8)Serve the Florentines when desired.
