Florentine Tuna Recipe

Ingredients
1 bunch fresh spinach
1 ripe tomato, chopped
2t olive oil
1 clove garlic, finely minced
1 T fresh parsley, finely minced
1t cider vinegar
1 T salt
1/2 T black pepper, coarsely ground
4 6-8 oz. tuna steaks
8 oz. vermicelli noodles, cooked and drained non-fat cooking spray
Directions
Rinse the spinach greens and steam for 5 minutes on the stove over medium heat.
Cool and chop finely.
Coat the grill with the cooking spray and preheat for 5 minutes.
In a medium saucepan, combine the chopped spinach, tomato, oil, garlic, parsley,vinegar, salt and pepper.
Simmer for 10 minutes.
Grill the tuna steaks for 6-8 minutes, or until the fish flakes easily.
Divide the vermicelli among four individual plates, spoon the sauce over each and top with the grilled tuna.
