1 egg
1/2 cup (125 mL) fine breadcrumbs
1/2 cup (125 mL) fresh mushrooms, thinly sliced
1 tbsp (15 mL) rolled oats
1 onion chopped fine
1/2 cup (125 mL) fresh tomatoes, unpeeled, diced
1 tbsp (15 mL) brown sugar
2 tbsp (30 mL) cream or milk
Grated rind of 1 lemon
1 tsp (5 mL) basil
1/2 tsp (2 mL) each salt and pepper
Directions
Mix all the ingredients together in a bowl.
Place in a glass loaf pan.

Microwave 20 minutes at MEDIUM-HIGH.
