Florentine Potatoes Recipe
Ingredients
| Potatoes | 4 Medium | |
| Bacon rashers | 2 , chopped | |
| Spinach leaves | 2 , finely shredded | |
| Butter | 30 Gram | |
| Sour cream | 2 Tablespoon | |
| Parmesan cheese | 1 Tablespoon, grated | |
| Mozzarella cheese | 1 Tablespoon, grated | |
| Cayenne pepper | 1 | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
1. Wash potatoes, prick with fork, place around outer edge of turntable, cook on HIGH for eight minutes or until tender. Stand for ten minutes. Combine bacon, spinach and butter in bowl, cook on HIGH for three minutes.
2. Slice tops from potatoes, scoop out pulp from shells, Mash pulp with bacon, spinach, sour cream and Parmesan cheese. Season to taste.
3. Spoon mixture into shells. Top with cheese and sprinkle lightly with cayenne pepper, cook on HIGH for four minutes.
