Floating Islands Recipe

Directions

Heat the milk to simmering point in a large pan.
Add the vanilla essence.
Whisk 2 egg whites until stiff then whisk in 4 oz. (1/2 cup) of sugar a teaspoon at a time, whisking well after each addition.
Place tablespoons of meringue on top of the milk and poach for 10 minutes, until set.
Place meringue 'islands' on a plate.
Strain the milk and measure 1 pint (2-1 cups).
Beat together the egg yolks, remaining egg and remaining sugar.
Pour on the measured milk, return to the pan and heat gently, without simmering, until thickened.
Strain the custard into a large shallow dish.
Lay the 'islands' on top and serve with fresh strawberries.
Serve warm or cold.
