Yummy Floating Island Recipe
Ingredients
| Custard | 1 , stirred | |
| Egg whites | 2 (Meringue:) | |
| Salt | 1/8 Teaspoon (Meringue:) | |
| Sugar | 1/4 Cup (16 tbs) (Meringue:) |
Directions
Preheat broiler.
Pour custard into 4 custard cups.
Beat egg whites with salt until frothy, gradually beat in, sugar, a little at a time, and continue to beat until stiff peaks form.
Using a serving spoon dipped in cold water, float a large spoonful of meringue on each custard.
Set custard cups in a large pan of ice water and broil 4" from heat until tinged with brown.
Serve at once.
