Flemish Beef Recipe
Ingredients
1 1/4 pounds flank steak
3 tablespoons butler
2 onions, thinly sliced
3 tablespoons flour
2 cups beer
1 bay leaf
1 teaspoon thyme
1 sprig parsley
2 teaspoons sugar
1 tablespoon vinegar
1 teaspoon salt
Freshly ground black pepper
1 slice white bread, crusts removed
1 tablespoon prepared (Dijon type) mustard
Directions
Cut the flank steak into pieces and brown lightly in the butter over high heat.
Remove the meat from the pan.
Saute the onions in the same butter.
Add the flour and cook until light brown.
Gradually add the beer, stirring constantly until the sauce is thickened and smooth.
Add the meat, bay leaf, thyme, parsley, sugar, vinegar, salt and pepper.
Cover the pan and let the meat simmer slowly for 1 hour.
Spread the slice of bread with mustard and place the bread in the pan.
Simmer for 1 hour more.
