Flattened Cumin-Grilled Chicken Breasts With Garlic Couscous Recipe

The flattened cumin grilled chicken breasts with garlic cous cous can be served as a complete meal. Prepared with a marinade of cumin, olive oil, garlic and orange juice with salt and pepper, the chicken is grilled and served with cooked cous cous flavored with garlic paste.

Ingredients

 6 boneless, skinless single chicken breasts (4 oz/125 g each) 6
 Olive oil1 Tablespoon
 2 tbsp orange juice concentrate 25 mL
 Ground cumin1 Teaspoon
 2 cloves garlic, minced 2
 Salt1/2 Teaspoon
 Pepper1/2 Teaspoon
 Chicken stock4 Cup (16 tbs) (Garlic Couscous:)
 Couscous8 Ounce (Garlic Couscous:)
 1 head roasted garlic (page 131), pureed (2 tbsp/25 mL) Salt and pepper to taste 1

Directions

Remove filets from chicken breasts (page 160).
Pound remaining pieces of chicken until about 1/2 inch/1 cm thick.
In small bowl, combine olive oil, orange juice concentrate, cumin, minced garlic, salt and pepper.
Rub mixture into chicken breasts.
Marinate for 10 minutes or up to overnight in refrigerator.
Grill chicken breasts on lightly oiled barbecue or grill for a few minutes per side — 3 to 5 minutes, or just until cooked through.
Meanwhile, to prepare couscous, bring chicken stock to boil.
Add couscous and cook for 10 minutes, or until tender.
Stir garlic paste into couscous.
Taste and season with salt and pepper.
Place couscous in serving dish and arrange chicken on top.
