Flaming Cherry Rack of Lamb Recipe

Ingredients

 
3-pound rack of lamb*
 
Seasoned salt
 
1/3 cup maraschino cherry juice
 
1/3 cup lemon juice
 
1/4 cup chopped red maraschino cherries (about 10 cherries)
 
1 teaspoon cornstarch
 
1/2 teaspoon mace or nutmeg
 
4 orange baskets
 
Grapes and whole red maraschino cherries
 
3 tablespoons Brandy

Directions

Place lamb on rack in shallow roasting pan; sprinkle with seasoned salt.
Bake in moderate oven (325°F) 1 1/2 hours.
Meanwhile, stir cherry juice, lemon juice and chopped cher- ries into cornstarch and mace in saucepan; cook, stirring constantly until mixture boils.
Drain off lamb drippings; pour 1/2 the cherry glaze over lamb.
Bake 30 minutes; pour remaining cherry glaze over lamb and bake 10 minutes longer or until meat thermometer registers 175° to 180°F.
(depend- ing upon desired degree of "doneness").
Place lamb on serving platter and garnish with orange baskets filled with grapes and cherries.
Heat brandy and ignite; pour over lamb.
