fisherman's Light Fillets Recipe
Fisherman's light fillets is a skillet cooked fish recipe that can be prepared with any choice of fish. Prepared with Italian dressing and vegetables like green pepper and onions along with tomatoes for taste, the fish is simmered to a finish. Served with hot rice, it makes a filling meal.
Ingredients
1/2 cup Lite Italian or Italian Dressing
1 small green pepper, cut into strips
1 small onion, thinly sliced
1 pound fish fillets
1 medium tomato, coarsely chopped
Hot cooked rice
Directions
In large skillet, heat lite Italian dressing and cook green pepper and onion over medium heat, stirring occasionally, 5 minutes or until tender.
Add fish and tomato, then simmer covered 10 minutes or until fish flakes.
