4 cans Manhattan or New England style clam chowder
4 soup cans water or milk
1/4 cup (2-ounce jar) chopped pimiento
1 egg, beaten
3 tablespoons cooking oil
1/2 teaspoon salt
1/2 cup milk
2 teaspoons baking powder
1 1/2 cups All Purpose Flour
4 1/2 ounce can medium shrimp,drained
3 slices pimiento cheese, cut into fourths
1/2 teaspoon parsley flakes
Directions
Heat chowder, water and pimiento to simmering in 3 or 4-quart Dutch oven.
In mixing bowl, combine egg, oil, salt, milk, baking powder, flour and shrimp.
Stir until moistened.
Drop by table-spoonfuls onto hot chowder.
Cover; simmer 15 minutes.
Top each dumpling with piece of cheese; sprinkle with parsley flakes.
Cover for 1 minute.
