| Frozen peas package | 1 | |
| 1 medium cucumber, cut lengthwise into fourths, then crosswise into 1 inch pieces | ||
| 1 medium stalk celery, cut diagonally into 1/4 inch slices | ||
| 1 small onion, cut into 1/4 inch slices | ||
| Salt | 1/2 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Butter/Margarine | 2 Tablespoon | |
Directions
If fillets are large, cut into 5 serving pieces.
Place in 2 quart microwavable casserole.
Sprinkle with 1 teaspoon salt and the pepper.
Cover and microwave on high until fish is almost done, 3 1/2 to 4 minutes.
Rinse frozen peas under running cold water to separate; drain.
Spoon peas, cucumber, celery and onion onto fish; sprinkle with 1/2 teaspoon salt and the lemon juice.
Dot with margarine.
Cover and microwave until vegetables are crisp tender and fish flakes easily with fork, about 6 minutes.
Sprinkle with paprika and garnish with lemon wedges, if desired.
