Fish With Brown Sauce Recipe
Ingredients
1 carp or bass or snapper (2 pounds)
1/3 cup lard or oil
2 teaspoons minced ginger root
3 sliced scallions
2 minced garlic cloves
1/2 cup sliced mushrooms
1 teaspoon salt
3 tablespoons soy sauce
1 tablespoon sherry
1 cup beef broth
1/2 teaspoon sugar
1 star anise
Directions
Leave the fish whole.
Clean, wash, and dry it, then score the fish on both sides.
Heat the lard or oil in a deep skillet; fry the fish in it until browned on both sides.
Pour off half the fat.
Add the ginger, scallions, garlic, mushrooms, salt, soy sauce, sherry, broth, sugar, and anise.
Cover and cook over low heat 30 minutes.
Turn the fish once or twice during the cooking time.
