Fish Stuffed Cucumbers Recipe
Ingredients
4 small cucumbers
1 cup white vinegar
1 teaspoon dried tarragon leaves
1 teaspoon salt
1 cup white fish fillets (cooked and diced)
1 cup mayonnaise
1/4 pint whipping cream, whipped
1 teaspoon Tabasco sauce
Salt and pepper to taste
2 hard-boiled egg yolks, finely chopped
Minced chives
Directions
Peel the cucumbers and cut them in half.
Scoop out the seeds with a small spoon.
In a mixing bowl, combine the vinegar, tarragon and salt.
Dip each cucumber half into the mixture to season.
Discard the vinegar solution.
Evenly divide the diced fish among the eight cucumber halves.
Mix the mayonnaise with the whipped cream, salt, pepper and Tabasco sauce.
Season to taste.
Spread mayonnaise mixture over each stuffed cucumber.
Decorate with finely chopped egg yolks and sprinkle with the chives.
