Fish Skewers With Nutmeg Rice Recipe

Ingredients
| Haddock | 3/4 Pound | |
| Vegetable oil | 2 Tablespoon | |
| Ground black pepper | 1 To taste | |
| Lemon juice | 1 Tablespoon | |
| Bay leaves | 6 | |
| Lemon | 1 , sliced | |
| Stuffed olives | 6 | |
| Long grain rice | 7/8 Cup (16 tbs) (Rice:) | |
| Finely grated rind and juice of 1/2 lemon | ||
| Butter | 1 Tablespoon (Rice:) | |
| Nutmeg | 1/2 Teaspoon, grated (Rice:) | |
| Salt | To Taste | |
Directions
Remove any skin and bones from the haddock and cut the fish into cubes.
In a bowl, blend together the oil, salt and pepper and lemon juice.
Add the fish and leave to marinate for about 30 minutes.
Arrange the fish, bay leaves, lemon slices and olives on two skewers.
Brush with the remaining marinade and place under a preheated moderate grill (broiler) for 10 minutes turning several times.
Cook the rice in boiling salted water for 15 minutes or until tender.
Drain and rinse.
Stir in the lemon rind and juice, butter and nutmeg.
Spoon into a hot serving dish and arrange the skewers on top.
Cooking time: 25 minutes
