Fish Mousse With Crawfish In Sauce Recipe

Ingredients
10 1/2 oz pike or hake fillets,thawed if frozen
2 egg whites
3/4 cup whipping cream
1 tsp fresh lemon juice
Salt
Pepper
1 tsp butter
4 crawfish (crayfish)
1/3 cup shrimp (prawn) bisque
1/3 cup sour cream (creme fraiche)
2 tbsp white port
Directions
Rinse the fish and pat dry on kitchen paper.
Cut the fish into small pieces and puree in a food processor, gradually adding the egg whites one at a time and the whipping cream.
Add the lemon juice.
Add salt and pepper to taste.
Butter 4 ramekin dishes and divide the fish puree between them.
Place them in a circle in the microwave oven, leaving the center empty, and cook for 6 minutes on MEDIUM-HIGH.
Bring a pan of salted water to the boil on a conventional cooker and boil the crawfish (crayfish) for 6 minutes.
Pour the shrimp (prawn) bisque into a bowl.
Add the sour cream (creme fraiche) and the port.
Stir well and microwave on HIGH for 2 minutes.
Drain the crawfish (crayfish).
Turn out each mousse on to a plate.
Coat each with sauce and decorate with one crawfish (crayfish).
