Fish Kebab Recipe
Ingredients
2 pounds swordfish or halibut with bones removed, cut in large cubes
1 cup olive oil
Juice of 2 lemons
1 teaspoon oregano
1 teaspoon dill
1 bay leaf
Salt and pepper to taste
Small whole onions, peeled
Whole cherry tomatoes
Directions
Marinate fish in a mixture of the oil, lemon juice, oregano, dill, bay leaf, salt, and pepper for 2 hours, basting occasionally.
Reserve marinade.
Alternate fish, onions, and tomatoes on skewers.
Broil, turning frequently, until done (about 5 minutes).
Heat marinade.
Serve with Fish Kebob.
