Ingredients
1 lb fish fillets
1 carrot
1 green pepper
2 sticks celery
3 tomatoes
1/4 cup peanut oil
1/3 cup vinegar
1/4 cup sugar
1 teaspoon very finely chopped fresh ginger
1/2 teaspoon salt
1/2 tablespoon cornstarch (optional)
Directions
Skin the fish and cut it into bite-sized pieces.
Cut the carrot and pepper into matchstick strips.
Cut the celery diagonally.
Drop the vegetables into boiling water and simmer for 5 minutes.
Drain.
Skin the tomatoes, remove seeds and chop roughly.
Heat the oil in a small pan and fry the fish until cooked, about 5-7 minutes.
Remove the fish and drain.
Pour off excess oil, add the vinegar, sugar, ginger, salt, cornflour (cornstarch), all the vegetables and 1/4 pint water.
Bring to the boil, stirring, add the fish and simmer for 2 minutes.
