Fish Fumet Recipe

Ingredients
2 lb (1 kg) fish heads, bones and trimmings
1 large onion sliced
1 leek, sliced (optional)
1 celery stalk, diced
2 tbsp (30 mL) celery leaves
1 bay leaf
1/2 tsp (2 mL) thyme
10 peppercorns
6 cups (1.5 L) water
1 tsp (5 mL) coarse salt
2 cups (500 mL) white wine
Directions
Place in a 12-cup (3 L) microwave-safe pan the fish heads, bones and trimmings, the onion, leek, celery, celery leaves, bay leaf, thyme, peppercorns, water and salt.
Cover.
Microwave 10 minutes at MEDIUM-HIGH.
Remove the scum that rises to the surface with a perforated spoon.
Add the wine, cover.
Microwave at MEDIUM-HIGH 10 minutes.
Let stand 15 minutes.
Strain through a sieve lined with a cloth.
You will have a clear liquid.
Cover.
Microwave 10 minutes at MEDIUM-HIGH.
