Ingredients
4 fish steaks or thick fillets (snapper, gemfish), skinned Milk
1 cup cornmeal (polenta)
1/2 cup oil
90g butter
Lemon wedges, to serve
Directions
Dip the fish in milk, then coat with cornmeal. Heat oil in a frying pan, add butter and, just as the mixture hanges color, add fish and cook, turning once, until delicately browned and cooked through (when a toothpick pushed into the fish slides in easily). Drain on crumpled paper towels and serve immediately with lemon wedges
