Fish Florentine Recipe

| Frozen chopped spinach | 1 Can (10 oz) | |
| Grated parmesan cheese | 1⁄4 Cup (4 tbs), divided | |
| Low fat yogurt | 1⁄4 Cup (4 tbs) | |
| Egg yolk | 1 | |
| Onion | 1 Small, finley diced | |
| Lemon juice | 2 Teaspoon | |
| Salt | 1⁄8 Teaspoon | |
| Ground nutmeg | 1⁄8 Teaspoon | |

Directions
Combine spinach, 2 tablespoons Parmesan cheese, yogurt, egg yolk, onion, lemon juice, salt, and nutmeg, mix well.
Line a steaming rack with cheesecloth, arrange fish on cheesecloth.
Place rack in a Dutch oven, cover and steam fish 5 minutes or until fish flakes easily when tested with a fork.
Carefully transfer fish to an ovenproof serving platter.
Spoon spinach mixture evenly over each fillet.
Sprinkle with remaining 2 tablespoons cheese, broil 3 minutes or until the cheese melts.
Garnish with lemon wedges, if desired.
