Fish Fillets With Shrimp Recipe

Ingredients

 
2 pounds fillets (flounder is tasty)
 
Salt and pepper to taste
 
1/2 cup water
 
2 tablespoons butter or margarine
 
1/2 pound small cooked shrimp
 
Lemon wedges

Directions

Season the fillets with salt and pepper and wrap in cheesecloth.
Put water in cooker and set rack in place.
Put fish on rack and close cover.
Set pressure control in place.
When pressure is reached, cook for 10 minutes.
Cool at once under running water.
Melt the butter in a saucepan.
Toss the shrimp in the butter so that each one be comes coated with butter.
Place the shrimp down the center of each fillet, pour browned butter over the fillets, and serve
