Fish Fillets On Spinach Recipe
Ingredients
1 1/2 pounds fish fillets
Juice of 1 lemon
2 pounds fresh spinach
2 tablespoons vegetable oil
1 medium onion, chopped
1 teaspoon butter or margarine
1/2 teaspoon salt
1/8 teaspoon white pepper
1/2 teaspoon grated fresh nutmeg
2 tomatoes, peeled, sliced
1/4 cup grated low fat mozzarella cheese
Directions
Wash fish; pat dry.
Sprinkle with lemon juice; let stand 10 minutes.
Wash spinach well; chop coarsely.
Heat oil in frypan.
Add onion; saute until soft.
Fry fish in pan with onions a few minutes on each side, until golden brown.
Remove fish and onions; reserve.
Add spinach to frypan; stir-fry 4 to 5 minutes.
Grease a casserole dish with butter; add spinach.
Arrange fish fillets on spinach; sprinkle with salt, pepper, and nutmeg.
Place tomatoes on fish; sprinkle with cheese.
Bake in preheated 350°F oven 15 minutes.
