Directions

Roll the fillets in absorbent paper to remove excess moisture.
Sprinkle with pepper and only 1/4 teaspoon (1 mL) of the salt.
Preheat a browning dish 5 minutes.
Without removing the dish from the oven, add the following into the hot dish: butter, garlic, onion, green onions and half the mushrooms.
Stir well.
Add the remaining salt; stir.
Microwave at HIGH 2 minutes.
Stir well.
Place the fillets, rolled or left whole, over the vegetables.
Sprinkle remaining mushrooms on top.
Pour the cider or wine over all.
Cover pan with waxed paper and microwave 4 to 5 minutes at HIGH.
Let stand 3 minutes.
Gently remove the fish to a hot platter with a perforated spoon.
Also with the spoon, drain out most of the mushrooms and sprinkle on top and around the fish.
Microwave the sauce 5 to 7 minutes at HIGH, or until reduced by half.
Whip the cream and fold into the hot gravy while beating with a whisk.
Pour over fish and serve.
