Fish Casserole With Saffron Recipe
Ingredients
| 3 pounds fish fillets, any variety | ||
| Salt | 2 Teaspoon | |
| Garlic | 1 Clove (5gm), minced | |
| Onion | 1 Large, sliced | |
| Green pepper | 1 , chopped | |
| Oil | 2 Tablespoon | |
| Saffron | 1/4 Teaspoon | |
| Stock | 3 Cup (16 tbs) | |
| Peppercorns | 4 | |
| 4 potatoes, pared and thinly sliced | ||
Directions
Sprinkle fish with 1 teaspoon salt.
Reserve; saute garlic, onion, and green pepper in oil in saucepan until tender.
Add saffron, stock, peppercorns, and remaining salt.
Bring to a boil.
Place layer of potatoes in greased 3-quart casserole; top with layer of fish.
Repeat with remaining potatoes and fish.
Add stock mixture; bake uncovered at 350° for 40 minutes, or until fish is easily flaked with a fork and still moist
