Directions

Cut the fish of your choice into individual portions.
Place in cold water to cover and add 1 tablespoon (15 mL) of coarse salt.
Soak 5 minutes.
Drain.
Pour into a 6-cup (1.5 L) microwave-safe dish 2 cups (500 mL) of milk Cover and microwave 2 minutes at HIGH.
Place the fish in the boiling milk, cover and micro wave at HIGH 4 minutes per pound (500g).
DO NOT COOK MORE THAN 3 POUNDS (1.5 KG) AT A TIME.
A personal note: To make a sauce with the milk, remove fish from dish with a perforated spoon.
Cream together 2 tablespoons (30 mL) flour with 2 tablespoons (30 mL) butter.
Add to hot milk.
Stir well.
Microwave 2 minutes uncovered.
Stir well; if not sufficiently thickened, microwave one more minute or as needed.
