Fish and Rice with Curry Sauce Recipe

Ingredients

 
1 1/2 pounds fish fillets
 
4 cups corn flakes
 
1 tablespoon salt
 
1 cup milk
 
4 teaspoons cooking oil
 
2 tablespoons butter or margarine
 
2 tablespoons flour
 
1/4 cup minced onion
 
2 teaspoons curry powder
 
3/4 teaspoon sugar
 
1/8teaspoon powdered ginger
 
1 cup milk
 
1 teaspoon lemon juice
 
4 cups seasoned cooked rice
 
1/3 cup chopped parsley

Directions

Cut fish into serving pieces.
Roll corn flakes into fine crumbs.
Dip fish in salted milk, then in crumbs and arrange on a well oiled baking sheet.
Sprinkle oil over top of fish.
Bake on top shelf of a very hot oven (500°F.) 12 to 15 minutes.
Melt butter in a saucepan; add onion and fry until tender but not brown.
Stir in flour, curry powder, sugar and ginger.
Add milk and cook, stirring constantly, until mixture thickens.
Stir in lemon juice just before serving.
Combine rice and parsley and pile in center of serving platter.
Surround with pieces of fish and serve with sauce on the side.
