Easy Fish And Chips Recipe
Ingredients
1 pound fresh or frozen fish fillets
1 pound potatoes, peeled (3 potatoes) Shortening
1/4 cup all-purpose flour
1/2 teaspoon salt
1 egg yolk
2 tablespoons water
1 tablespoon salad oil
1 stiffly beaten egg white
1/4 cup all-purpose flour
Directions
Thaw frozen fish.
Cut into 3 or 4 portions.
Cut potatoes into uniform strips, slightly larger than for french fries.
Fry potatoes in deep, hot fat (375°) till golden brown, about 7 to 8 minutes.
Remove, drain, and keep warm.
Combine 1/4 cup flour and salt.
Make well in center; add egg yolk, water, and oil.
Stir till batter is smooth.
Fold in egg white.
Dip fish in 1/4 cup flour, then into batter.
Fry in deep, hot fat (375°) till golden brown, about 1 1/2 minutes on each side.
Sprinkle fish and chips with salt.
To serve, sprinkle fish with vinegar, if desired.
