Fish With Zucchini And Red Sauce Recipe
Ingredients
| 1 pound fresh or frozen (defrosted) | ||
| Fish fillets, cut into | ||
| Serving pieces | ||
| Salt | 1/2 Teaspoon | |
| Tomato-Chili Sauce | ||
| Parmesan cheese | 2 Tablespoon, grated | |
| 2 small zucchini, cut crosswise into | ||
| 1/4-inch slices (about 1/2 pound) | ||
| Garlic salt | 1/4 Teaspoon | |
| 1/4 cup coarsely shredded carrot | ||
Directions
1. Arrange fish with thickest parts to outside edge in 9-inch pie plate; sprinkle with salt. Cover tightly and microwave on high (100%) 3 minutes; drain.
2. Prepare Tomato-Chili Sauce. Spread 1 tablespoon of the sauce over each piece of fish; sprinkle with 1 tablespoon of the cheese. Arrange zucchini slices on fish; sprinkle with garlic salt and remaining cheese. Cover tightly and microwave on high (100%) until fish flakes easily with fork, 3 to 4 minutes. Top with shredded carrot and serve with remaining Tomato-Chili Sauce.
