Ingredients
Flour
2 cloves garlic, chopped
Salt
1/4 cup wine vinegar
Porgies, bluefish, or halibut
1 6 ounce can tomato paste
Olive oil
1 can water or more
2 bay leaves
Salt and pepper to taste
Directions
Flour and salt fish.
Fry fish in 1 inch hot oil in skillet until browned.
Arrange cooked fish in casserole.
Pour off all but about 1/2 cup of the olive oil in skillet.
Remove skillet from heat.
Add bay leaves and garlic and stir in vinegar, tomato paste, water, and salt and pepper.
Return to heat and simmer for 15 to 20 minutes.
Pour over cooked fish.
Cover immediately and allow to stand at least 1 hour before serving.
