Fish With Mayonnaise Sauce Recipe
Ingredients
1 striped bass, cleaned, 5 pounds
2 celery stalks, sliced
4 scallions, chopped
Salt
Water to cover
2 carrots, sliced
Mayonnaise:
5 egg yolks
1 cup olive oil
3-4 tablespoons prepared mustard
1/2 cup lemon juice
Directions
Wash and scale fish.
Salt well.
Tie in cheesecloth and place on rack in fish kettle with carrots, celery, and scallions.
Add water and bring to a simmer.
Cover kettle and simmer fish for 35 minutes.
Cool in broth.
Remove fish and place on platter.
Remove cheesecloth.
Beat egg yolks and mustard in an electric mixer at medium speed until thick. (If milder sauce is preferred, use half the amount of mustard specified.)
Very slowly pour in olive oil and lemon juice and continue to beat until sauce is smooth and thick.
Pour over fish.
Salt well.
